Preheat the oven to 400 degrees
Use an oven-safe pan (cast iron is best) to cook the filling in the fat (season to taste) until just about done
Whisk together the eggs and cream (season to taste), pour it in the pan, and give it a quick stir to mix things up
Cook on the stove for another 2 minutes to set the bottom
Sprinkle in the cheese
Transfer to the oven and cook for 20 minutes until set
Sprinkle some extra cheese or fresh herbs on top is desired (fresh basil is nice)
Let it rest 5 minutes before serving
