Slice the tomato into 1/4 inch slices
Salt the tomato slices, wait a few minutes
Drizzle olive oil lightly over the tomato slices
Slice the mozzarella into 1/4 inch slices, top the tomatoes with the sliced mozzarella
Drizzle a little more olive oil and some balsamic vinegar over mozzarella
Sprinkle salt and pepper over the cheese
Top with basil. If using fresh, one leaf per slice. If using dried, sprinkle lightly.
