Preheat oven to 400 degrees.
Peel the Beets and chop into bite sized pieces.
Place beets in a bowl with the olive oil. Toss until coated.
Line a baking sheet with parchment or silicone mat and roast on center rack for 20 minutes.
Let the beets cool for at least 20 minutes.
Place greens on a plate and add beets and goat cheese. Sprinkle with walnuts
Serve with strawberry or raspberry vinaigrette.
