Roasted Beets and Walnuts Salad

Course Salad

Ingredients

  • 1 LB Beets
  • 2 oz Goat cheese
  • 1/3 cup Walnuts
  • Spring greens mix
  • 1 tblsp Olive oil

Instructions

  • Preheat oven to 400 degrees. 
  • Peel the Beets and chop into bite sized pieces. 
  • Place beets in a bowl with the olive oil. Toss until coated. 
  • Line a baking sheet with parchment or silicone mat and roast on center rack for 20 minutes. 
  • Let the beets cool for at least 20 minutes. 
  • Place greens on a plate and add beets and goat cheese. Sprinkle with walnuts 
  • Serve with strawberry or raspberry vinaigrette.
