Roasted Beets and Walnuts Salad
Ingredients
- 1 LB Beets
- 2 oz Goat cheese
- 1/3 cup Walnuts
- Spring greens mix
- 1 tblsp Olive oil
Instructions
- Preheat oven to 400 degrees.
- Peel the Beets and chop into bite sized pieces.
- Place beets in a bowl with the olive oil. Toss until coated.
- Line a baking sheet with parchment or silicone mat and roast on center rack for 20 minutes.
- Let the beets cool for at least 20 minutes.
- Place greens on a plate and add beets and goat cheese. Sprinkle with walnuts
- Serve with strawberry or raspberry vinaigrette.
