Arugula Olive Salad
Ingredients
- 2 cups arugula
- ½ small red onion
- ½ small avocado
- ¼ cup Castelvetrano olives
- ¼ cup kalamata olives
- feta cheese
- dressing
Instructions
- Thin slice red onion on a mandolin
- Slice avocado
- Slice olives
- Combine all items in a bowl
- Use dressing of your choice
