Simple Potato Curry

Simple Potato Curry
Ingredients
- 3 red potatoes medium
- 1 onion small
- 1 14 oz can Coconut Milk
- 1 tbls Yellow curry powder
- 3 cloves garlic minced
- 1 tsp tumeric
- 1/4 tsp Cayenne pepper
- 1 tbls canola or vegetable oil
- Salt and pepper
Instructions
- Peel the potatoes and dice into 1/2 inch cubes.
- Take a medium sized pot and put a vegetable steamer in it. Fill water to the bottom of the steamer basket. Heat over high heat until boiling. Put the potatoes in the steamer and cover the pot. Steam for 25 minutes until cooked through but not mushy. Drain and set the potatoes aside.
- Dice the onion. Heat the oil over medium high heat in a skillet until shimmering. Add the onions and sauté until translucent (about 4-5 minutes).
- Turn the heat down to medium. Add the coconut milk, and all the spices and mix well. Cook for about 4 minutes until coconut milk is quite hot but not boiling.
- Add the potatoes. Stir gently to coat the potatoes. Cover and simmer for 30 minutes stirring occasionally to keep the potatoes from sticking to the pan.
- Add salt and pepper to taste.
